Yummy Recipe: Cowboy Caviar

In my last post I told you that David made some really yummy Cowboy Caviar. It's a great thing to serve at a party. Here is the recipe as quoted by David himself:

Cowboy Caviar

Serves...a few or so

In a bowl, mix the following:

2 cans of white shoepeg corn.
2 cans of black-eyed peas or black beans
2 green onions, chopped
13 1/2 cherry tomatoes, chopped
2 avocadoes, peeled, pitted, chopped and mildly glared at

Stir in the following to coat:

2 glugs red wine vinegar
4 "Rachael Rays" of extra virgin olive oil

Season to taste with the following:

Salt
Pepper
Love
LOTS OF CUMIN!! Like 2 tablespoons of it!!

Optional Ingredients:

Chopped jalapenos
Chopped cilantro
Chopped finger tips

Serve with chips at room temperature.
